|Vinificació||First maceration and fermentation with the skins, until exhausting the sugars, in stainless steel tanks at 22ºC.|
A vineyard with 17 years of ecological cultivation. These grapes are picked manually in small boxes of 20 kg, towards the end of September when they are at their optimum point of ripeness. Then the grapes are gradually cooled till 10ºC in a cold room.
Maceration and fermentarion with the skins untill the sugars run out. Pressed and placed in barrels of Chestnut an French Oak, in order obtain a malolactic fermentation, and where iti will evolve for 12 monts before bottling it.
In the nose it moves us to a candied black plum. The tannins are pleasant with their frank aromas and have nice notes of butter, wich is the reason why the palate is creamy. The persistence in the mouth invites us to taste this wine with tranquillity. We advise to decant the wine for 20 minutes before drinking it, so that you can appreciate its great evolution.
This is a wine very suitable to enjoy with red meat and sauces, cured cheeses, good sausages, wild and why not with a good fresh grilled tuna.
It is recommended to serve between 8 and 10ºC and to store in a cool and dry place.
