This organic Merlot vineyard was planted 28 years ago and the vines are trained along the Cordon de Royat trellis system. The grapes are picked by hand and packed gently into small crates toward the end of September, and only when they have reached their optimum point of ripeness.
After picking, we refrigerate the grapes overnight to a temperature of 10 ºC in a cooling chamber.
We macerate and then ferment the grapes with their skins until there is no more natural sugar left. We then press the wine and age it in chestnut, French oak and American oak barrels for 6 months. The wine is then bottled straight after.
A deep and glossy cherry red with complex and high-toned aromas of clove, bay leaf and green pepper with pleasant smoky undertones from its ageing on chestnut and French-American oak. Soft tannins which melt into honest aromas of plum jam, among others.
This wine is an ideal companion for red meats served with sauces, mature cheeses, tuna belly, Catalan pan-roasted snails and cuttlefish with potatoes.
We recommend that you serve this wine at a temperature of 8 to 10 ºC and that you store it in a cool and dry place.
