This organic Merlot vineyard was planted 28 years ago and the vines are trained along the Cordon de Royat trellis system. The grapes are picked by hand and packed gently into small crates toward the end of September, and only when they have reached their optimum point of ripeness.
After picking, we refrigerate the grapes overnight to a temperature of 10 ºC in a cooling chamber.
We obtain the first-pressed must from the pneumatic press once the grapes have undergone a short maceration when the juice comes into contact with the skins, giving the wine its characteristic fruity aromas.
This wine is a bright cherry red, with overtones of floral and forest-fruit aromas and subtle balsamic notes.
On the palate, it is pleasant and fresh.
This wine is fantastic as an aperitif and makes a versatile food companion for salt cod and artichokes, seafood dishes, monk fish stew, and cuttlefish with potatoes.
We recommend that you serve this wine at a temperature of 8 to 10 ºC and that you store it in a cool and dry place.
