|Vinificació||We ferment the first-pressed flower must (using a pneumatic press) for 15 days at 15.5ºC in stainless steel tanks.|
This organic vineyard was planted 28 years ago and the vines are trained along the Cordon de Royat trellis system. The grapes are picked by hand and packed gently into small crates toward the end of September, and only when they have reached their optimum point of ripeness.
After picking, we refrigerate the grapes overnight to a temperature of 10 ºC in a cooling chamber.
We obtain the first-pressed must from the pneumatic press once the grapes have undergone a short maceration when the juice comes into contact with the skins, giving the wine its characteristic fruity aromas.
Pale pink colour, with salmon reflections. Aroma of sweet red fruits such as cherries and raspberries. It is light on the palate, balance and refreshing.
This wine is fantastic as an aperitif and makes a versatile food companion for salt cod to Pil Pil, grilled vegetables and barbecued meats.
We recommend that you serve this wine at a temperature of 8 to 10 ºC and that you store it in a cool and dry place.
