The vineyard producing these organically-grown grapes was planted 52 years ago with bush vines, and is located on the western slopes of the Ordal mountain range, known as "Costers d'Ordal" in the sub-county of Subirats.
These grapes are picked by hand and packed gently into small 20 kg crates. The grapes then undergo a second process of careful hand selection in the cellar and are refrigerated overnight at a temperature of 10 ºC in a cooling chamber to ensure a good natural clarification ("desfangat").
The wine is then fermented on its lees in chestnut and French oak barrels for 6 months at a temperature of 17-18 ºC, with the lees being periodically stirred in (batonnage).
This wine is a golden yellow colour and has a fruity nose with overtones of ripe banana.
On the palate the wine is balanced and creamy, thanks to its ageing in chestnut and French oak barrels, with herbaceous undertones of forest undergrowth.
This wine is ideal with smoked salmon and salads with shrimp and avocado. It also pairs beautifully with oysters and traditional paella.
We recommend that you serve this wine at a temperature of 10 to 12ºC and that you store it in a cool and dry place.
