Information: 

The Xarel.lo that is used comes from the estate of Serral, and are grown on old bush vines of ecological cultivation.

The harvest begins at the end of September ant the grapes are picked by hand  and  trasported  in  small  boxes of  20  kg.  Then  the  grapes  are gradually cooled till 10ºC in a cold room.

We process the grapes cold  and  macerate  in  order to  obtain  a  better quality of the wine. Clean   flower  must  ferment at  low  temperature  in stainless steel tanks. Subsequently  we make  a second fermentation and aging in the bottle, on the lees for 30 months prior to disgorgement.

Tasting Note:

This cava produces a small bubbles  that  will make a long  rosary. In  the nose we can appreciate aromas of white flower, tropical pineapple and an undertone of the Mediterranean forest.  In  the  mouth  we  will  find  light tastes  that  remind  us  of  citrus  fruits  like  grapefruit. It  is  frank  and persistent. This cava invites us to try it again and savour it.

Gastronomy:

We recommend enjoying this cava as an appetizer or accompanying fish dishes, such  as  cor or tuna and any other  dish you would like  to share with your friends.

It is recommended to serve  betwen 7 and 9ºC  and to store in a cool any dry place.
