A vineyard that is cultivated for 10 years ecologically. Grapes that are picked manually in small boxes of 20 kg. after checking that the grapes are at its optimal point of phenolic maturation. Then the grapes are gradually cooled till 10ºC in a cold room. We obtain the flower must in a pneumatic press, with a slight maceration of the skins from which the fruity aromas, that characterize the taste, are obtained. Subsequently we make a second fermentarion and aging in the bottle, on its lees for more than 12 months.
This cava produces small bubbles forming a small ring in the glass, creating a beautifull with crown. In the nose we recognise red fruits of the forest; raspberry, blackberry... It is a cava that is pleasant in the mouth with a slight and fun tickling of the bubbles, with a long and persistent aftertaste and with a very balance sweet-acid finish.
We recommend to enjoy this cava is with appetizer, with some good anchovies, oysters and razors and of course in good company. Discover yourselves the most siutable dish to combine this cava with.
It is recommended to serve between 7 and 9ºC and to sotre in a cool and dry place.
